6 TRADITION - 트레디션 Tradition caviar comes from the White Sturgeon, a species from the Pacific coasts of North America between Alaska and Baja, California. It is one of the longest living sturgeons, sometimes living to be one hundred years old; it is heavier than 1750 lbs. (800 kg) and measures up to 19 feet long (6 m). In addition to providing a lean, high protein meat, its biggest value still remains connected to the remarkable production of large eggs, bigger than 3 millimeters, with coloring varying form dark grey to black. The taste is particularly delicate and elegant. OSCIETRA - 오시에트라 Oscietra caviar comes from the Sturgeon of the same name, also known as Russian Sturgeon (An ancient species originally native to the Black Sea, The Caspian Sea and the Azov Sea) It is a medium size fish that can weigh from 44 to 110 lbs (50 kg.) providing a poppy and slightly nutty caviar with coloring that ranges from dark brown to beige. Many consider this to be the most refined caviar. Their eggs are medium sized (between 2.6 and 2.9 millimeters). 7 SEVRUGA - 세브루가 Sevruga caviar comes from Sturgeon of the same name, a small sized species which rarely reaches 55 lbs. (25 kg.) It can be found in the Black Sea, the Caspian Sea, and the Azov Sea and in the respective tributaries, and it is also in the Aegean Sea and the eastern Ionian Sea. It has a rather aromatic taste and is characterized by small eggs (about 2 millimeters) with a color that varies from light to anthracite grey.
